  • 6 hard-boiled eggs large
  • 3 tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp white vinegar
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • paprika for garnish
  • fresh chives optional, chopped

Method
 

  1. Peel the hard-boiled eggs and slice each in half lengthwise.
  2. Scoop out the yolks and place them into a mixing bowl.
  3. Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
  4. Spoon or pipe the mixture back into the egg white halves.
  5. Garnish with paprika and optional chives.
  6. Chill for at least 20 minutes before serving.

Notes

For an extra-smooth filling, blend yolk mixture briefly with a hand mixer.
