Method
- Add ham bone, split peas, onion, carrots, celery, garlic, bay leaves, thyme, and broth to a large soup pot.
- Bring to a boil, then reduce heat and simmer covered for 1 hour.
- Uncover and continue simmering 20–30 minutes until peas are soft and soup has thickened.
- Remove ham bone, chop remaining ham, and return the meat to the soup.
- Season with pepper and salt to taste.
- Stir in diced cooked ham if using, garnish with parsley, and serve warm.
Notes
Soup will thicken significantly as it cools; add water or broth as needed.
