Ingredients
  

Main Ingredients
  • 1 ham bone meaty, with leftover ham
  • 1 lb green split peas rinsed
  • 1 onion diced
  • 3 carrots chopped
  • 3 celery stalks chopped
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1 tsp thyme dried
  • 8 cups chicken broth
  • 0.5 tsp black pepper
  • salt to taste
  • 1 cup diced ham optional, added at the end
  • fresh parsley for garnish

  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Add ham bone, split peas, onion, carrots, celery, garlic, bay leaves, thyme, and broth to a large soup pot.
  2. Bring to a boil, then reduce heat and simmer covered for 1 hour.
  3. Uncover and continue simmering 20–30 minutes until peas are soft and soup has thickened.
  4. Remove ham bone, chop remaining ham, and return the meat to the soup.
  5. Season with pepper and salt to taste.
  6. Stir in diced cooked ham if using, garnish with parsley, and serve warm.

Notes

Soup will thicken significantly as it cools; add water or broth as needed.
