Ingredients
  

Marinade
  • 2 lb chicken thighs boneless, skinless
  • 3 tbsp chipotle peppers in adobo finely chopped
  • 1 tbsp adobo sauce from the can
  • 1 tbsp garlic minced
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano dried
  • 1 tsp salt
  • 0.5 tsp black pepper
For Cooking
  • 1 tbsp oil or butter for pan-searing
  • lime wedges for serving
  • fresh cilantro garnish

Equipment

  • Mixing bowl
  • Grill or skillet
  • Knife
  • Cutting board

Method
 

  1. Combine all marinade ingredients in a bowl.
  2. Add chicken thighs and coat fully. Marinate at least 1 hour.
  3. Grill, sear, or bake chicken until cooked through and charred.
  4. Rest for 5 minutes, then chop into pieces.
  5. Garnish with cilantro and lime. Serve warm.

Notes

Marinating overnight gives the chicken maximum smoky flavor and tenderness.
