Ingredients
  

  • 2.5 lb chicken thighs and drumsticks bone-in, skin-on
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup pearl onions
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 tbsp fresh thyme
  • 1 bay leaf
  • 1.5 cups dry Riesling wine
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Equipment

  • Dutch oven
  • Wooden spoon

Method
 

  1. Season chicken with salt and pepper.
  2. Brown chicken in butter and oil; remove.
  3. Sauté onions and mushrooms.
  4. Add garlic and cook briefly.
  5. Deglaze with Riesling wine.
  6. Add broth, thyme, bay leaf, and chicken; simmer covered.
  7. Stir in cream and simmer uncovered.

Notes

Use dry Riesling only for authentic flavor.
