Ingredients
  

Filling
  • 1 cup cottage cheese blended smooth
  • ½ cup mascarpone cheese optional
  • 3 egg yolks large
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup Greek yogurt
Coffee Layer
  • 1 cup strong brewed espresso or coffee cooled
  • 2 tbsp coffee liqueur optional
Assembly
  • 16-20 ladyfinger biscuits
  • unsweetened cocoa powder for dusting
  • dark chocolate shavings optional garnish

Method
 

  1. Blend cottage cheese until smooth. Add mascarpone, egg yolks, sugar, vanilla, and Greek yogurt; blend until creamy.
  2. Mix coffee and coffee liqueur in a shallow bowl.
  3. Quickly dip ladyfingers into coffee mixture 1–2 seconds; layer in dish or cups.
  4. Spread half of cottage cheese filling over ladyfingers.
  5. Add second layer of dipped ladyfingers, then remaining filling. Smooth surface.
  6. Refrigerate at least 4 hours or overnight to set.
  7. Dust top with cocoa powder and garnish with chocolate shavings before serving.

Notes

Use high-quality coffee for the best flavor. Optional mascarpone enhances creaminess.
