- In a small bowl, mix mayonnaise, BBQ sauce, mustard, ketchup, smoked paprika, garlic powder, and pickle juice if using. Refrigerate.
- Combine ground beef with salt, pepper, garlic powder, onion powder, Worcestershire, and shredded cheddar. Shape into 8–10 slider patties.
- Cook bacon until crisp, chop, and set aside.
- Heat a skillet over medium-high. Cook slider patties 2–3 minutes per side. Add cheese and cover to melt.
- Butter and toast slider buns until golden.
- Assemble sliders with sauce, patties, bacon, crispy onions, and jalapeños.
- Serve warm with extra cowboy sauce.
Notes
For spice, add chipotle powder to the patties or use spicy BBQ sauce.
