Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp crushed red pepper flakes optional
  • 28 oz crushed tomatoes
  • 6 cups beef broth
  • 8 lasagna noodles broken into pieces
  • salt and pepper to taste
  • 0.25 cup fresh basil optional
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • salt and pepper to taste

Equipment

  • Large pot
  • Wooden spoon

Method
 

  1. Heat oil in a large pot and brown the ground beef; drain excess fat.
  2. Add onion and cook 3 minutes; add garlic and cook 30 seconds.
  3. Stir in tomato paste, Italian seasoning, basil, oregano, and red pepper flakes; cook 1 minute.
  4. Add crushed tomatoes and beef broth; bring to a simmer.
  5. Add broken lasagna noodles and simmer 15–20 minutes until tender.
  6. Mix ricotta, mozzarella, parmesan, salt, and pepper in a bowl.
  7. Taste soup and adjust seasoning; stir in fresh basil if using.
  8. Serve soup topped with a dollop of cheese mixture.

Notes

For a creamy variation, add 1/2 cup heavy cream. Spinach can be added in the last 2 minutes.
