- Heat oil in a large pot and brown the ground beef; drain excess fat.
- Add onion and cook 3 minutes; add garlic and cook 30 seconds.
- Stir in tomato paste, Italian seasoning, basil, oregano, and red pepper flakes; cook 1 minute.
- Add crushed tomatoes and beef broth; bring to a simmer.
- Add broken lasagna noodles and simmer 15–20 minutes until tender.
- Mix ricotta, mozzarella, parmesan, salt, and pepper in a bowl.
- Taste soup and adjust seasoning; stir in fresh basil if using.
- Serve soup topped with a dollop of cheese mixture.
Notes
For a creamy variation, add 1/2 cup heavy cream. Spinach can be added in the last 2 minutes.
