Ingredients
  

Roast
  • 3 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Cranberry Balsamic Sauce
  • 2 cups fresh cranberries
  • 0.5 cup balsamic vinegar
  • 1 cup beef broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp honey
  • 2 sprigs rosemary
  • 2 sprigs thyme

Method
 

  1. Preheat oven to 325°F (165°C). Season beef with salt and pepper.
  2. Sear roast in olive oil until browned on all sides.
  3. Sauté onion and garlic in the same pot.
  4. Add cranberries, balsamic vinegar, broth, honey, and herbs.
  5. Return beef to pot, cover, and roast 3–3½ hours.
  6. Rest beef before slicing and thicken sauce if desired.

Notes

Sauce thickens naturally as cranberries break down.
