Method
- Preheat oven to 325°F (165°C). Season beef with salt and pepper.
- Sear roast in olive oil until browned on all sides.
- Sauté onion and garlic in the same pot.
- Add cranberries, balsamic vinegar, broth, honey, and herbs.
- Return beef to pot, cover, and roast 3–3½ hours.
- Rest beef before slicing and thicken sauce if desired.
Notes
Sauce thickens naturally as cranberries break down.
