  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.33 cup granulated sugar
  • 0.5 cup cold unsalted butter cut into cubes
  • 0.5 cup fresh or frozen cranberries halved
  • 1 tbsp orange zest
  • 0.5 cup heavy cream plus more for brushing
  • 0.25 cup pure maple syrup
  • 1 egg large
  • 1 tsp vanilla extract
Maple Glaze
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup
  • 1-2 tbsp milk or cream as needed
  • 0.5 tsp orange zest optional for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Fold in cranberries and orange zest.
  5. Whisk cream, maple syrup, egg, and vanilla; add to dry mixture and stir until dough forms.
  6. Shape into a 1-inch thick circle, cut into 8 wedges, and place on baking sheet.
  7. Brush with cream and bake for 18–20 minutes until golden.
  8. Cool slightly and drizzle with maple glaze before serving.

Notes

For extra flavor, add chopped pecans or drizzle with maple-orange glaze before serving.
