Ingredients
  

Soup Base
  • 3 tbsp butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups artichoke hearts drained, canned or frozen
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 1 tsp thyme dried, or 1 tbsp fresh
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
  • 0.25 cup parmesan grated, optional

Equipment

  • Immersion blender
  • Cutting board

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion and cook until soft.
  3. Stir in garlic and cook 1 minute.
  4. Add artichoke hearts and thyme.
  5. Pour in chicken broth and bring to a simmer.
  6. Simmer for 20 minutes to blend flavors.
  7. Blend soup with an immersion blender until smooth.
  8. Add cream, lemon juice, and optional parmesan.
  9. Warm gently without boiling, then serve.

Notes

Use canned or frozen artichokes for best texture and convenience. Blend thoroughly for a silky finish.
