Salad Ingredients
  • 12 oz rotini pasta
  • 2 cups romaine lettuce chopped
  • 2 avocados diced
  • 0.5 cup Parmesan cheese shaved
  • 1 cup croutons
Dressing Ingredients
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 0.5 tsp black pepper
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Whisk together all Caesar dressing ingredients and refrigerate.
  2. Cook rotini pasta according to package directions and cool completely.
  3. In a large bowl, combine pasta, romaine, avocado, and shaved Parmesan.
  4. Pour dressing over the salad and toss to coat.
  5. Add croutons just before serving and top with black pepper.

Notes

Add lettuce and croutons right before serving for best texture.
