Ingredients
  

  • 3 cups cooked chicken breast diced or shredded
  • 4 cups fresh spinach
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • 9x13 baking dish
  • Large skillet
  • Mixing bowl

Method
 

  1. Preheat oven to 375°F and grease baking dish.
  2. Sauté onion in olive oil until softened.
  3. Add garlic and cook briefly, then add spinach until wilted.
  4. Mix cream and cream cheese until smooth.
  5. Combine chicken, spinach mixture, sauce, cheeses, and seasoning.
  6. Transfer to baking dish, top with cheese, and bake until bubbly.

Notes

Great served over rice, pasta, or with crusty bread.
