  • 3 cups shredded cooked chicken rotisserie or cooked breast
  • 8 oz cream cheese softened
  • 3 cups fresh spinach
  • 1 onion diced
  • 2 cloves garlic minced
  • 10.5 oz cream of chicken soup
  • 0.5 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated parmesan cheese optional
  • 2 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp dried parsley

Method
 

  1. Preheat oven to 350°F and lightly grease a baking dish.
  2. Sauté diced onion in butter until softened, then add garlic and cook 1 minute.
  3. Add softened cream cheese and stir until melted and creamy.
  4. Mix in cream of chicken soup, chicken broth, salt, pepper, paprika, and dried parsley.
  5. Stir in shredded chicken and fresh spinach until spinach is wilted.
  6. Transfer mixture to a baking dish and spread evenly.
  7. Top with shredded mozzarella and optional parmesan.
  8. Bake for 20–25 minutes or until hot, bubbly, and lightly golden.

Notes

For richer flavor, add cooked bacon or extra parmesan cheese.
