- Preheat oven to 350°F and lightly grease a baking dish.
- Sauté diced onion in butter until softened, then add garlic and cook 1 minute.
- Add softened cream cheese and stir until melted and creamy.
- Mix in cream of chicken soup, chicken broth, salt, pepper, paprika, and dried parsley.
- Stir in shredded chicken and fresh spinach until spinach is wilted.
- Transfer mixture to a baking dish and spread evenly.
- Top with shredded mozzarella and optional parmesan.
- Bake for 20–25 minutes or until hot, bubbly, and lightly golden.
Notes
For richer flavor, add cooked bacon or extra parmesan cheese.
