Chicken Base
  • 2 large chicken breasts diced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp Italian seasoning
Vegetables
  • 2 cups mushrooms sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp butter
Cream Sauce
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp pepper
Topping
  • 0.5 cup mozzarella cheese for topping
  • parsley for garnish

Method
 

  1. Season diced chicken with salt, pepper, paprika, and Italian seasoning.
  2. Sear chicken in olive oil until lightly browned; set aside.
  3. Sauté mushrooms, onions, and garlic in butter until softened.
  4. Add cream, broth, sour cream, and seasonings; whisk until smooth.
  5. Stir in cheeses and melt into a creamy sauce.
  6. Combine chicken with sauce and transfer to a casserole dish.
  7. Top with cheese and bake at 375°F (190°C) for 25–30 minutes.
  8. Let rest 5 minutes, garnish with parsley, and serve.

Notes

Add spinach, broccoli, or peas for extra vegetables. Ideal for meal prep.
