Soup Base
  • 1.5 lb chicken breast diced
  • 2 tbsp butter
  • 1 onion diced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 3 tbsp flour
  • 4 cups chicken broth
  • 2 lb potatoes peeled and diced
  • 0.75 cup cream
  • 1 bay leaf
  • 2 sprigs thyme

Method
 

  1. Sauté onion, carrots, and celery in butter.
  2. Add garlic and flour, stirring well.
  3. Gradually add broth and potatoes.
  4. Simmer until potatoes are tender.

  6. Stir in cream, season, and serve.
