Ingredients
  

Pasta & Sauce
  • 12 oz spaghetti or fettuccine
  • 2 tbsp olive oil
  • 3 garlic cloves finely minced
  • 0.5-1 tsp red chili flakes adjust to taste
  • 1 cup canned crushed tomatoes
  • 0.5 cup heavy cream or coconut cream for dairy-free
  • 0.25 cup grated Parmesan cheese or vegan alternative
  • 2 tbsp fresh parsley chopped, for garnish
  • to taste salt
  • to taste black pepper

Equipment

  • Large pot
  • Skillet
  • Wooden spoon

Method
 

  1. Cook pasta according to package instructions; reserve ½ cup pasta water.
  2. Heat olive oil in skillet; sauté garlic and chili flakes until fragrant.
  3. Add crushed tomatoes; simmer 5–7 minutes until slightly thickened.
  4. Lower heat; stir in cream and optional butter. Season with salt and pepper.
  5. Toss pasta with sauce, adding reserved pasta water as needed.
  6. Stir in Parmesan cheese and serve garnished with parsley.

Notes

Adjust chili flakes to taste. Use pasta water to achieve desired sauce consistency.
