Ingredients
  

Salad
  • 2 lbs Yukon Gold or red potatoes
  • 0.75 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice fresh
  • 0.25 cup fresh dill chopped
  • 0.25 cup red onion finely diced
  • 0.5 cup celery chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Place potatoes in salted cold water and bring to a boil.
  2. Cook until fork-tender, about 12–15 minutes, then drain.
  3. Whisk mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a bowl.
  4. Fold warm potatoes into dressing gently.
  5. Add dill, onion, and celery. Stir carefully.
  6. Chill for at least 30 minutes before serving.

Notes

For best flavor, refrigerate 1–2 hours before serving and garnish with extra fresh dill.
