Ingredients
  

Pasta
  • 12 oz pasta any shape
  • 1 cup pasta water reserved
Creamy Lemon Feta Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup feta cheese crumbled
  • 0.5 cup heavy cream
  • 1 lemon zested and juiced
  • 0.5 tsp black pepper
  • 0.25 tsp salt
  • 0.5 tsp crushed red pepper flakes optional
Finishing Touches
  • fresh basil chopped
  • extra feta for topping

Equipment

  • Large pot
  • Skillet
  • Wooden spoon
  • Zester

Method
 

  1. Cook pasta in salted boiling water until al dente; reserve pasta water.
  2. Heat olive oil in a skillet and sauté garlic for 1 minute.
  3. Add feta, cream, lemon juice, and lemon zest. Stir until creamy.
  4. Add pasta water gradually until sauce becomes silky.
  5. Add pasta and toss until coated.
  6. Garnish with basil, extra feta, and lemon zest. Serve warm.

Notes

Use block feta for the smoothest sauce. Add lemon slowly to adjust tartness.
