Ingredients
  

Pasta
  • 12 oz pasta rigatoni or spaghetti
Ricotta Sauce
  • 1 cup ricotta cheese whole milk
  • 1 lemon zested and juiced
  • 2 tbsp olive oil extra virgin
  • 2 cloves garlic minced
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Mixing bowl
  • Zester

Method
 

  1. Cook pasta in salted water until al dente.
  2. Mix ricotta, lemon zest, lemon juice, olive oil, garlic, salt, and pepper.
  3. Toss warm pasta with ricotta sauce and reserved pasta water.
  4. Stir in Parmesan and adjust seasoning before serving.

Notes

Best served immediately while warm and creamy.
