Ingredients
  

Salad
  • 2 cups elbow macaroni uncooked
  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.5 cup celery diced
  • 0.5 cup red bell pepper diced
  • 0.25 cup red onion diced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Cook macaroni in salted boiling water until al dente, then drain and cool.
  2. Whisk mayonnaise, mustard, vinegar, sugar, salt, and pepper.
  3. Toss cooled pasta with dressing.
  4. Fold in vegetables and parsley.
  5. Chill at least 1 hour before serving.

Notes

For best flavor, refrigerate for at least one hour before serving and stir before serving.
