Ingredients
  

Chicken and Mushrooms
  • 4 boneless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb mushrooms sliced
  • 1 small onion diced
  • 3 cloves garlic minced
  • salt and black pepper to taste
Creamy Sauce
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tsp Dijon mustard optional
  • 1 tsp thyme fresh or ½ tsp dried
  • 2 tbsp all-purpose flour optional for thicker sauce
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Season chicken with salt and pepper; sear in olive oil and butter until golden and cooked through.
  2. Sauté onions and garlic in the same skillet, then add mushrooms and cook until tender.
  3. Stir in flour (if using), then gradually add chicken broth and heavy cream.
  4. Add Dijon mustard and thyme; simmer until sauce thickens.
  5. Return chicken to skillet, coat with sauce, garnish with parsley, and serve.

Notes

For extra flavor, deglaze the pan with white wine before adding cream.
