Ingredients
  

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 0.5 cup chicken or vegetable broth
  • 0.75 cup Parmesan cheese grated
  • 0.5 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • salt and black pepper to taste
  • fresh basil or parsley for garnish

Method
 

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 30 seconds.
  3. Stir in sun-dried tomatoes and cook for 1–2 minutes.
  4. Pour in heavy cream and broth, stirring to combine.
  5. Add Parmesan cheese, seasoning, and pepper flakes; stir until smooth.
  6. Add gnocchi and cook for 4–5 minutes until tender.
  7. Stir in spinach until wilted.
  8. Garnish with basil and serve warm.

Notes

For a protein boost, add chicken or shrimp before simmering the sauce.
