- Season salmon with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear salmon 4–5 minutes per side. Remove and set aside.
- Add butter to the skillet, then sauté garlic until fragrant.
- Stir in sun-dried tomatoes.
- Pour in heavy cream, parmesan, and Italian seasoning. Simmer until the sauce thickens slightly.
- Add spinach and let it wilt.
- Return salmon to the skillet, spooning sauce over the top. Simmer 2–3 minutes.
- Stir in lemon juice, garnish with basil, and serve warm.
Notes
Serve with pasta, rice, potatoes, or crusty bread to soak up the sauce.
