Ingredients
  

Chicken and Seasoning
  • 4 chicken thighs or drumsticks bone-in
  • 3 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1.5 tsp Creole seasoning
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.5 tsp dried thyme
Vegetables
  • 2 cups baby potatoes halved
  • 2 carrots sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 onion sliced

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix melted butter, olive oil, garlic, Creole seasoning, paprika, thyme, salt, and pepper.
  3. Place vegetables on a baking sheet and toss with some of the garlic butter.
  4. Coat chicken with remaining garlic butter mixture.
  5. Arrange chicken over vegetables.
  6. Roast for 35–40 minutes until chicken is cooked through.
  7. Stir vegetables halfway through cooking.
  8. Garnish with parsley and serve.

You can substitute vegetables based on season or preference.
