Method
- Preheat oven to 400°F (200°C).
- Mix melted butter, olive oil, garlic, Creole seasoning, paprika, thyme, salt, and pepper.
- Place vegetables on a baking sheet and toss with some of the garlic butter.
- Coat chicken with remaining garlic butter mixture.
- Arrange chicken over vegetables.
- Roast for 35–40 minutes until chicken is cooked through.
- Stir vegetables halfway through cooking.
- Garnish with parsley and serve.
