Ingredients
  

  • 2 zucchini thinly sliced
  • 2 eggs large
  • 1 cup breadcrumbs panko preferred
  • 0.5 cup parmesan cheese grated
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Slice zucchini thinly and pat dry.
  3. Whisk eggs in a shallow bowl.
  4. Mix breadcrumbs, parmesan, and seasonings.
  5. Dip zucchini into egg then breadcrumb mixture.
  6. Arrange in a single layer and drizzle with olive oil.
  7. Bake, flipping halfway, until crispy and golden.
