Ingredients
  

Crispy Chicken
  • 2 chicken breasts boneless, skinless
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cups breadcrumbs
  • 0.5 cup Parmesan cheese grated
Salad
  • 6 cups romaine lettuce chopped
  • 1 cup croutons
  • 0.5 cup Parmesan cheese shaved
Caesar Dressing
  • 0.5 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce

Method
 

  1. Slice and bread chicken cutlets.
  2. Fry 3–4 minutes per side until golden and cooked through.
  3. Whisk dressing ingredients until smooth.
  4. Toss lettuce with dressing.
  5. Top with sliced crispy chicken, croutons, and Parmesan.

Notes

For extra crunch, use panko breadcrumbs and rest chicken on wire rack after frying.
