Method
- Flatten chicken to even thickness and season with salt, pepper, garlic powder, and paprika.
- Set up breading station: flour, beaten eggs, panko-Parmesan mixture.
- Dredge chicken in flour, dip in eggs, then coat in panko-Parmesan mixture.
- Heat ¼ inch oil in skillet over medium heat. Fry chicken 4–5 minutes per side until golden and 165°F internally.
- Drain on paper towels.
- Assemble sandwiches: spread Caesar dressing on buns, layer lettuce and crispy chicken, sprinkle extra Parmesan.
- Serve immediately.
Notes
For extra crunch, bake chicken in oven at 400°F for 20 minutes instead of frying.
