Ingredients
  

Fried Zucchini
  • 2 zucchini sliced 1/4 inch thick
  • 1 cup flour
  • 2 eggs beaten
  • 1 cup breadcrumbs regular or panko
  • 0.5 cup Parmesan cheese grated
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • oil for frying
Garlic Aioli
  • 0.5 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp olive oil

Equipment

Method
 

  1. Combine all aioli ingredients in a small bowl and refrigerate.
  2. Slice zucchini and set up bowls for flour, eggs, and breadcrumb mixture.
  3. Dredge zucchini in flour, then egg, then breadcrumbs.
  4. Heat oil in a skillet to 350°F and fry zucchini 2–3 minutes per side until golden.
  5. Drain on paper towels and serve with garlic aioli.

Notes

Use panko breadcrumbs for extra crunch.
