- Combine all aioli ingredients in a small bowl and refrigerate.
- Slice zucchini and set up bowls for flour, eggs, and breadcrumb mixture.
- Dredge zucchini in flour, then egg, then breadcrumbs.
- Heat oil in a skillet to 350°F and fry zucchini 2–3 minutes per side until golden.
- Drain on paper towels and serve with garlic aioli.
Notes
Use panko breadcrumbs for extra crunch.
