  • 1 lb potato gnocchi store-bought or homemade
  • 4 cups fresh spinach leaves washed
  • 1/2 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • Optional garnish red chili flakes or toasted pine nuts

Method
 

  1. If using store-bought gnocchi, boil or follow package instructions. Drain and pat dry.
  2. Heat olive oil in a large nonstick skillet over medium-high heat.
  3. Add gnocchi in a single layer; fry 2–3 minutes per side until golden and crispy. Remove and set aside.
  4. Sauté minced garlic in the same skillet for 30 seconds. Add spinach and cook 1–2 minutes until wilted. Season with salt and pepper.
  5. Return crispy gnocchi to the skillet and gently toss with spinach. Sprinkle crumbled feta on top.
  6. Serve immediately with optional red chili flakes or toasted pine nuts.

Notes

Pat gnocchi dry for maximum crispiness and serve immediately for best texture.
