- Boil baby potatoes in salted water for 15–20 minutes until fork tender.
- Preheat oven to 425°F and line a baking sheet with parchment.
- Drain potatoes and allow them to cool slightly.
- Place potatoes on baking sheet and gently smash using a glass.
- Drizzle olive oil and season with garlic, salt, pepper, and paprika.
- Roast for 25–30 minutes until crispy and golden.
- Garnish with parsley and Parmesan cheese before serving.
Notes
For extra crispiness, broil the potatoes for the last 2–3 minutes.
