Ingredients
  

Potatoes
  • 1.5 lb baby potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp parsley chopped
  • 2 tbsp Parmesan cheese optional

Method
 

  1. Boil baby potatoes in salted water for 15–20 minutes until fork tender.
  2. Preheat oven to 425°F and line a baking sheet with parchment.
  3. Drain potatoes and allow them to cool slightly.
  4. Place potatoes on baking sheet and gently smash using a glass.
  5. Drizzle olive oil and season with garlic, salt, pepper, and paprika.
  6. Roast for 25–30 minutes until crispy and golden.
  7. Garnish with parsley and Parmesan cheese before serving.

Notes

For extra crispiness, broil the potatoes for the last 2–3 minutes.
