Ingredients
  

Chicken & Stew Base
  • 2 lbs boneless skinless chicken thighs
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • to taste salt and pepper
  • 2 tbsp butter
  • 2 tbsp all-purpose flour for thickening
Dumplings
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 3 tbsp unsalted butter melted
  • 0.5 cup milk adjust for consistency
Garnish
  • to taste fresh parsley chopped

Equipment

Method
 

  1. Place chicken, carrots, celery, onion, and garlic in slow cooker; add broth and seasonings.
  2. Cook on low 6–7 hours or high 3–4 hours until chicken is tender.
  3. Shred chicken with forks and return to slow cooker.
  4. Melt butter in pan, whisk in flour, then stir into slow cooker to thicken.
  5. Mix flour, baking powder, salt, melted butter, and milk to form dumpling dough.
  6. Drop dumplings onto simmering stew, cover, and cook 30–40 minutes until fluffy.
  7. Serve warm, garnished with fresh parsley.

Notes

Dumplings are best fresh. Leftovers can be reheated gently with extra broth.
