Crock Pot Crack Potato Soup

Ingredients
  

Potatoes & Veggies
  • 6 medium russet potatoes peeled and diced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
Soup Base
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
Cheesy & Topping Ingredients
  • 2 cups shredded sharp cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 2 green onions thinly sliced

Equipment

Method
 

  1. Spray crock pot with nonstick cooking spray and add diced potatoes, onion, and garlic.
  2. Pour in chicken broth and stir in salt, pepper, smoked paprika, and garlic powder.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours until potatoes are tender.
  4. Mash potatoes partially using a potato masher or immersion blender, leaving some chunks.
  5. Stir in butter, heavy cream, and sour cream until smooth. Add 1 1/2 cups cheddar cheese until melted.
  6. Serve hot, topped with remaining cheese, crumbled bacon, and green onions.

Notes

For thicker soup, mash more potatoes. For thinner, add extra broth. Substitute vegetable broth for vegetarian version.
