Method
- Spray crock pot with nonstick cooking spray and add diced potatoes, onion, and garlic.
- Pour in chicken broth and stir in salt, pepper, smoked paprika, and garlic powder.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours until potatoes are tender.
- Mash potatoes partially using a potato masher or immersion blender, leaving some chunks.
- Stir in butter, heavy cream, and sour cream until smooth. Add 1 1/2 cups cheddar cheese until melted.
- Serve hot, topped with remaining cheese, crumbled bacon, and green onions.
Notes
For thicker soup, mash more potatoes. For thinner, add extra broth. Substitute vegetable broth for vegetarian version.
