- Brown the Italian sausage in a skillet over medium heat. Drain grease and add sausage to Crock-Pot.
- Add baby potatoes, onion, garlic, and sun-dried tomatoes.
- Pour in chicken broth and add Italian seasoning, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Stir in heavy cream and fresh spinach 20 minutes before serving.
- Serve hot with Parmesan if desired.
Notes
For freezing, omit cream and spinach until reheating.
