Ingredients
  

Soup
  • 1 lb Italian sausage browned
  • 1 lb baby potatoes halved
  • 1 onion diced
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Finish
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 0.5 cup Parmesan grated, optional

Method
 

  1. Brown the Italian sausage in a skillet over medium heat. Drain grease and add sausage to Crock-Pot.
  2. Add baby potatoes, onion, garlic, and sun-dried tomatoes.
  3. Pour in chicken broth and add Italian seasoning, salt, and pepper.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Stir in heavy cream and fresh spinach 20 minutes before serving.
  6. Serve hot with Parmesan if desired.

Notes

For freezing, omit cream and spinach until reheating.
