Ingredients
  

For the Roast
  • 3-4 lb boneless pork shoulder or butt
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • 1 tsp paprika
  • salt and pepper to taste
For the Vegetables & Sauce
  • 4 carrots peeled and chopped
  • 4 potatoes peeled and quartered
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1.5 cups chicken or beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp cornstarch optional
  • 2 tbsp water for slurry

Method
 

  1. Pat pork roast dry and rub with oil and seasonings.
  2. Brown in a skillet 2–3 minutes per side for flavor.
  3. Place carrots, potatoes, onions, and garlic in slow cooker.
  4. Set roast on top. Mix broth, Worcestershire, and Dijon; pour over roast.
  5. Cover and cook on Low 8–10 hours or High 4–5 hours.
  6. Remove roast and vegetables. Thicken juices with cornstarch slurry for gravy.
  7. Serve roast sliced or shredded with vegetables and gravy.

Notes

For added sweetness, replace part of the broth with apple cider.
