Method
- Pat pork roast dry and rub with oil and seasonings.
- Brown in a skillet 2–3 minutes per side for flavor.
- Place carrots, potatoes, onions, and garlic in slow cooker.
- Set roast on top. Mix broth, Worcestershire, and Dijon; pour over roast.
- Cover and cook on Low 8–10 hours or High 4–5 hours.
- Remove roast and vegetables. Thicken juices with cornstarch slurry for gravy.
- Serve roast sliced or shredded with vegetables and gravy.
Notes
For added sweetness, replace part of the broth with apple cider.
