Ingredients
  

For the Salad
  • 2 cups shredded chicken cooked
  • 2 cups red cabbage shredded
  • 2 cups green cabbage shredded
  • 1 cup carrots shredded
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 3 green onions sliced
  • 0.5 cup cilantro chopped
  • 0.33 cup peanuts chopped
For the Peanut Dressing
  • 0.33 cup peanut butter creamy
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated
  • 2 tbsp water to thin, more as needed

Method
 

  1. Whisk peanut butter, soy sauce, rice vinegar, honey, lime, sesame oil, garlic, and ginger; thin with warm water as needed.
  2. Combine cabbage, carrots, peppers, green onions, cilantro, and chicken in a large bowl.
  3. Add half the dressing and toss well.
  4. Top with chopped peanuts and drizzle with more dressing before serving.

Notes

Store dressing separately for the crispiest salad.
