Ingredients
  

Salad
  • 2 large cucumbers diced
  • 2 avocados diced
  • 0.25 cup red onion thinly sliced
  • 3 tbsp lemon juice fresh
  • 2 tbsp olive oil
  • 2 tbsp fresh herbs cilantro or dill, chopped
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Add diced cucumbers, avocados, and red onion to a mixing bowl.
  2. In a small bowl, whisk lemon juice, olive oil, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle with fresh herbs and serve immediately.

Notes

Best served fresh as avocado browns quickly. Add avocado right before serving.
