Ingredients
  

Cucumber Avocado Salad
  • 2 large cucumbers thinly sliced
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh cilantro or parsley chopped
  • 1 lime juiced
  • 2 tbsp olive oil
  • salt and black pepper to taste

Method
 

  1. Slice cucumbers, dice avocados, halve cherry tomatoes, and thinly slice red onion. Chop herbs.
  2. Whisk together lime juice, olive oil, salt, and black pepper in a small bowl.
  3. Gently toss cucumbers, avocado, tomatoes, red onion, and herbs with the dressing.
  4. Serve immediately as a fresh side dish or light meal.

Notes

Toss avocado with lime juice immediately to prevent browning. Optional add-ins include feta or seeds for extra flavor and texture.
