  • 2 medium cucumbers thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls drained
  • 1/4 cup fresh basil leaves torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or vinegar
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • Optional garnish toasted pine nuts or microgreens

Method
 

  1. Wash and slice cucumbers; halve cherry tomatoes.
  2. In a large bowl, toss cucumbers, cherry tomatoes, and mozzarella balls.
  3. Tear basil leaves and fold into salad.
  4. Drizzle with olive oil and balsamic glaze; season with salt and pepper.
  5. Serve immediately; optionally sprinkle with pine nuts or microgreens.

Notes

Use fresh mozzarella and crisp cucumbers for best results. Serve immediately for maximum freshness.
