Ingredients
  

Salad
  • 2 English cucumbers sliced
  • 1 cup fresh mozzarella pearls
  • 1 cup cherry tomatoes halved
  • 0.25 cup fresh basil leaves torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze optional
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper freshly cracked

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Wash and slice cucumbers evenly.
  2. Halve cherry tomatoes.
  3. Combine cucumbers, mozzarella, and tomatoes in a bowl.
  4. Add torn basil leaves.
  5. Drizzle olive oil and season with salt and pepper.
  6. Toss gently to combine.
  7. Drizzle balsamic glaze if desired and serve.

Notes

Best served fresh. Add salt just before serving to prevent excess moisture.
