Ingredients
  

Salad
  • 1 cup quinoa cooked and cooled
  • 1.5 cups cucumber diced
  • 0.33 cup feta cheese crumbled
  • 0.25 cup red onion finely diced
  • 2 tbsp fresh herbs parsley or dill
Dressing
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh

Method
 

  1. Cook quinoa and allow to cool completely.
  2. Combine quinoa, cucumber, onion, and herbs in a bowl.
  3. Whisk dressing ingredients together.
  4. Toss salad with dressing and fold in feta.
