Ingredients
  

Vegetables & Cheese
  • 2 large cucumbers sliced into rounds
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.33 cup feta cheese crumbled
  • 2 tbsp fresh herbs parsley or dill, chopped
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • salt and black pepper to taste

Method
 

  1. Wash and slice cucumbers and cherry tomatoes. Thinly slice red onion. Chop fresh herbs.
  2. Combine cucumbers, tomatoes, red onion, feta, and herbs in a medium bowl.
  3. Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper. Toss gently.
  4. Refrigerate 10–15 minutes if desired. Serve chilled as a snack or appetizer.
