- Heat oil and splutter cumin seeds.
- Add half the onions and sauté until golden.
- Add ginger-garlic and spices; sauté briefly.
- Add tomatoes and cook until oil separates.
- Add potatoes, salt, and water; simmer until tender.
- Add remaining onions and cook uncovered.
- Finish with garam masala and garnish.
