- Heat butter in a large pot over medium heat. Add onions, celery, bell pepper, and garlic. Sauté 5–7 minutes until softened.
- Stir in diced tomatoes, paprika, cayenne (if using), Old Bay seasoning, salt, and pepper. Cook 2–3 minutes.
- Pour in stock. Bring to a simmer and cook 10 minutes.
- Fold in crab meat and cream. Simmer 5 more minutes, stirring gently.
- Taste and adjust seasonings as needed.
- Serve in bowls, garnished with parsley. Optional: serve with crusty bread or oyster crackers.
Notes
For extra depth, simmer the stew longer to concentrate flavors; avoid overcooking crab.
