Ingredients
  

Cookie Base
  • 1 cup natural peanut butter no added sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.5 cup powdered erythritol
  • 1 cup unsweetened shredded coconut
  • 0.25 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Line a baking sheet with parchment paper.
  2. Melt butter over low heat and stir in peanut butter until smooth.
  3. Add cocoa powder, sweetener, vanilla, and salt. Mix until glossy.
  4. Fold in shredded coconut until evenly combined.
  5. Scoop onto tray and flatten slightly.
  6. Chill 15–20 minutes until firm.

Notes

Store in refrigerator for best texture. Can be frozen up to 2 months.
