Ingredients
  

Breakfast Pizza Base
  • 4 English muffins split in half
  • 6 large eggs
  • 2 tbsp milk or cream
  • 1 tbsp butter
  • 1 cup cooked bacon or sausage crumbled
  • 1.5 cups shredded cheddar cheese or mozzarella blend
  • 0.5 cup pizza sauce or marinara optional
  • 1 tbsp chopped green onions or parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange English muffin halves on baking sheet and toast for 5–6 minutes.
  3. Whisk eggs with milk, salt, and pepper. Scramble lightly in a skillet with butter until just set.
  4. Spread pizza sauce (optional) on toasted muffin halves. Top with scrambled eggs, bacon or sausage, and shredded cheese.
  5. Bake 8–10 minutes, until cheese is melted and bubbly.
  6. Cool slightly, garnish with green onions or parsley, and serve warm.

Notes

Make ahead and freeze for easy breakfasts. Reheat in oven or air fryer for best results.
