Ingredients
  

  • 10 flour tortillas large
  • 10 eggs large
  • 1 lb breakfast sausage
  • 1.5 cups shredded cheese cheddar or Mexican blend
  • 2 cups diced potatoes or hash browns
  • 0.5 cup bell pepper diced
  • 0.5 cup onion diced
  • 2 tbsp butter or oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large skillet
  • Mixing bowl
  • Foil or parchment paper

Method
 

  1. Cook sausage until browned; set aside.
  2. Cook potatoes, peppers, and onions until tender.
  3. Scramble eggs until just set.
  4. Assemble burritos with eggs, sausage, potatoes, and cheese.
  5. Roll tightly and wrap individually.
  6. Freeze in a freezer-safe container.

Notes

Let fillings cool completely before assembling to prevent soggy burritos.
