Ingredients
  

Cowboy Cabbage
  • 1 lb ground beef
  • 1 tbsp butter or oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 small head cabbage chopped
  • 10 oz Rotel or diced tomatoes with green chilies
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup Fritos plus more for topping

Equipment

  • Large skillet
  • Knife
  • Cutting board
  • Spatula

Method
 

  1. Brown the ground beef in a large skillet and drain excess grease if needed.
  2. Add onion and garlic and cook until softened.
  3. Add chopped cabbage and butter, cooking until tender.
  4. Stir in Rotel, paprika, chili powder, cumin, salt, and pepper.
  5. Fold in cheddar cheese and 1 cup of Fritos.
  6. Top with additional cheese and Fritos before serving warm.

Notes

Add sour cream for creaminess or jalapeƱos for extra heat.
