Ingredients
  

Shortbread Cookies
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 0.25 tsp salt
  • 0.5 cup rainbow sprinkles jimmies
Frosting
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Method
 

  1. Cream butter and powdered sugar until smooth. Mix in vanilla.
  2. Add flour and salt, mixing until just combined. Fold in sprinkles.
  3. Roll dough between parchment and chill until firm.
  4. Cut cookies and bake until set. Cool completely.
  5. Prepare frosting by beating butter, sugar, vanilla, and cream.
  6. Sandwich cookies with frosting and serve.

Notes

Use jimmies to prevent color bleeding.
