Ingredients
  

Beef and Potatoes
  • 1 lb beef sirloin or tenderloin cut into bite-sized cubes
  • 1 lb baby potatoes diced into 1-inch cubes
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt adjust to taste
  • 1 tbsp fresh parsley chopped for garnish
  • 1 tsp fresh rosemary or thyme optional

Method
 

  1. Boil diced potatoes in salted water for 8–10 minutes until just tender. Drain.
  2. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear beef cubes for 2–3 minutes per side. Remove and set aside.
  3. In the same skillet, add 1 tbsp olive oil and 2 tbsp butter. Sauté potatoes for 5–7 minutes until golden.
  4. Add minced garlic, smoked paprika, salt, and black pepper. Cook 1–2 minutes until fragrant.
  5. Return beef to the skillet, toss, and cook an additional 3–4 minutes until desired doneness.
  6. Garnish with chopped parsley and optional rosemary or thyme. Serve hot.

Notes

Do not overcrowd the skillet to ensure beef sears properly.
