Method
- Boil diced potatoes in salted water for 8–10 minutes until just tender. Drain.
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear beef cubes for 2–3 minutes per side. Remove and set aside.
- In the same skillet, add 1 tbsp olive oil and 2 tbsp butter. Sauté potatoes for 5–7 minutes until golden.
- Add minced garlic, smoked paprika, salt, and black pepper. Cook 1–2 minutes until fragrant.
- Return beef to the skillet, toss, and cook an additional 3–4 minutes until desired doneness.
- Garnish with chopped parsley and optional rosemary or thyme. Serve hot.
Notes
Do not overcrowd the skillet to ensure beef sears properly.
