Ingredients
  

Roasted Sweet Potatoes
  • 3 sweet potatoes peeled and cubed
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 cup Parmesan grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Optional Garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place cubed sweet potatoes on the baking sheet.
  3. Drizzle with olive oil and add garlic, Parmesan, Italian seasoning, salt, and pepper. Toss to combine.
  4. Spread the potatoes in a single layer, leaving space between each cube.
  5. Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
  6. Sprinkle with fresh parsley and serve warm.

Notes

For extra crispiness, use two baking sheets to prevent overcrowding.
