Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place cubed sweet potatoes on the baking sheet.
- Drizzle with olive oil and add garlic, Parmesan, Italian seasoning, salt, and pepper. Toss to combine.
- Spread the potatoes in a single layer, leaving space between each cube.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Sprinkle with fresh parsley and serve warm.
Notes
For extra crispiness, use two baking sheets to prevent overcrowding.
